than on the Old Santa Fe Trail, Bistro 315 has a trendy decor. Chef Matt Yohalem prepares
bistro fare using organic vegetables, locally raised beef and lamb, free-range chicken,
and fresh seafood. Seasonal specialties on the ever-evolving menu might include the
duckling with creamy polenta and wild mushrooms, or the stuffed Portobello mushrooms
